Salad in a Jar: Cobb Salad

One of my fav lunches...Salad in a Jar.  Here is what I mixed up this time .....

My husband and I ordered some pollo a la brasa from El Chevere...(so good!!!).  At any rate, of course we had some leftovers, so I placed it in the processor, knowing I'd find some use for it in a day or two.  Sure enough.

Salad in a Jar: Cobb Salad w/Pollo a la Brasa
Layer in a mason jar in this order:

-Buttermilk Ranch Dressing (yogurt)
-Tri-Colored Cherry Tomatoes
-Grilled Chicken ( I used leftover pollo a la brasa from El Chevere)
-1 Boiled Egg
-Hand full Baby Spinach
-Hand full Mixed Greens
-Fresh (thick grated) Parmesan Cheese
-(1 Strip) of Thick Sliced Bacon fried and crumbled

Stays fresh in Mason Jar for up to 4-5 days (if you use a vacuum sealer, even longer).  Turn upside down and shake it out of jar and into a salad bowl...... mmmm mmmm mmmm
