Our move to our new home is finally over - boxes still left to be unpacked and lots of organization ahead; but in the meantime - décor is a must!!!
Our new bathroom has a large/long cubby - Of course, my brain began to turn its wheels trying to figure out what to do with this space.
There was an antique chest I found in the basement while moving a while ago. I love shopping in our own home lol. Things were popping out of everywhere - so I dust off, make it pretty and put it to use!!
The chest serves as toilet paper storage and a few magazines for us/guests to read while on the thrown lol.
There are towels in the cubby too. Perfectly hidden from view (I hate towels all over the place).
I used a pastry stand for the candles and other décor - I couldn't find a place to store it, so I used it instead :)
This is the view from the throne, looks better in person with the candles lit.
So you 'll have a sense of tranquility while taking a sh** in our home. LMAO (sorry, yes I had to go there)

DIY: Kitchen Table - Take II (everything looks better with a little TLC)
Inspired by other bloggers once again.......
Our poor kitchen table has taken a beat'n. I've had it for 7 years, love the pub style and seating for 6 with ample room for serving platters, etc. At any rate! 7 years of eating on it. 7 years of art projects, painting with my daughter, etc. the poor table has taken a beat'n. Take a look for yourself. This is when I just started to sand it.
Recently I found this sight and totally fell in love with it (I've mentioned it on previous posts). http://thegraphicsfairy.com/ and being as my kitchen theme is vintage inspired with wine bottles, etc. and my poor kitchen table needed a makeover; I decided to search for the perfect typography and found it: http://thegraphicsfairy.com/french-transfer-printable-wine-theme-typography/

AND I GOT TO WORK........
Thankfully, my boss had a projector I could borrow...Woot!! Woot!! Got home and got my things together......
I followed "ALMOST" all the instructions on the tutorial (I could not find Minwax "Antique Walnut" I only found it in the 2 in 1 stain and polyurethane; and I did not hear great reviews. Instead I used "Dark Walnut 2716" and instead of using polyurethane, I used shellac as the Home Depot guy recommended on a frequently used kitchen table) and after 3 hours and knees, back and neck killing me it was coming along ..... I don't have the steadiest hands, but I'm really happy with the finished product...you'll see.....
NEXT I stained......
It's not as shiny as it looks, there is a fan/light just above which shines on the table.....this was the final product AFTER shellac; and no those are not real cobwebs...it's October and our house is decorated with cobwebs in each room.

Recycling .... and just in time for Halloween decor
Love Mod Podge'ing (don't know if that's really a word)...and I also love to reuse....why waste??
So I finished up two bottles of lotion from Bath & Body works and being as I have been decorating the inside and outside of our house with October/Halloween décor, I figured why not use these bottles for something....like "Potion" or "Poison", etc.
So I searched on Google Images for some Halloween bottle and jar labels and found a ton. I copied and pasted on a Word doc, printed, cut out and Mod Podge'd (don't know if that's really a word either).
Now I have a few bottles of potion, poison, snake oil, etc. in our bathroom's Halloween décor.....

Lemon-Thyme Bruschetta

Love entertaining family and friends, always looking to Pinterest for some guidance and ideas....
So I found a "last minute appetizer" and let me tell you ...it was so frik'n delish, for a quick "last minute" dish it truly taste like something I spent quite some time on.
This appetizer was so easy to do and took minutes to prepare....

Lemon-Thyme Bruschetta

Lemon-Thyme Bruschetta
Serves 10 as an appetizer
1 baguette; thinly sliced
8 ounces ricotta cheese
1 lemon; zested
Salt
Freshly cracked black pepper
Honey
8 springs fresh thyme
Black Hawaiian sea salt; optional
Preheat the oven to 425 degrees F.
Mix together ricotta and lemon zest. Season with salt and pepper to taste. Set aside.
Toast baguette slices in the oven for 5-7 minutes until slightly browned and warm. Spread liberally with seasoned ricotta. Drizzle with honey, sprinkle with thyme. Serve warm.

Just one more day ~ In memory of my brother Orlando "Landi" Ortiz

This past week, by far has been the toughest. Losing someone is so hard. Losing a brother just makes your heart sink
into the depths of sorrow.
He impacted so many people, and he probably never knew
it. Everyone who I’ve spoken with, had
such beautiful things to say about him, what he did, what a great friend he
was, hard worker, etc.
It saddens me that there were unspoken words. Words regrettably, that will remain
unspoken. Regrets now dwelling in my
heart that are just unshakable; but I focus on the good times we had, the
laughter we shared and it makes things feel a little easier to deal with. I know I need to just let go and leave
everything in God’s hands, but where do I begin?
On Thursday, I sat at the wake thinking of him, thinking of
the times we shared. Reminiscing on our
childhood. How he always protected me
when my other brothers picked on me. He
taught me how to protect myself. He and
my dad would raise their hands at chest level while I punched as fast as I
could, and called me “Macha Camacha.”
I thought of the life we lived and its share of trouble, but
for all the bad times, we had great times doubled. The tales we told of our childhood were so
crazy and sometimes hard to believe, the same tales we repeated over and over
and over each time we got together. I
remember a few months ago we sat around the dinner table and Orlando told my
husband of the tales growing up….I laughed so hard and I remembered walking
away saying “I’ve heard this story a thousand times”. How I wish I had a thousand more…. they never
get old, nor will they ever. Those
laughs and tears are now treasured memories. I’m just so mad….there were still many tales
yet to unfold, but he left us halfway through with so many pages unwritten.
As tears ran down my face, I smiled while I sat there
looking at him; when I stood to greet a friend that came to pay his respects….I
swear I saw him. He was wearing the red
shirt he wore to my wedding. He stood
there while people made their way to the casket and just like that he was
gone. It was as if, through his eyes he
was saying everything will be ok. . . . but still, it hurts so bad.
Seeing my parents go through this takes its toll, seeing my
dad tear up when we are sitting at the dinner table is heart wrenching. Seeing my mom trying to stay strong for my
dad, walking away to her room to cry is heartbreaking. I’m so happy to see my
parents, but not under these circumstances.
I don’t want to believe today, just want to go back to our
yesterdays; when I had the opportunity to say I love you and I’m sorry for the
moments left unspoken.
I cannot pray for strength to conquer this task. I pray for a humble spirit to rely upon God’s
grace. I cannot pray to understand why
life can seem so unfair, but pray instead for a grateful heart to always give
and love and care. If this experience has
taught me anything it is to never leave words unspoken, always say I love you and
take advantage of every opportunity of writing tales in your family history.
Sadly, this tale ends with a goodbye and many gaps and pages left empty. I do have one more opportunity to continue
the tales of our lives and that is through my niece (his daughter) Briana. I promise to hold her hand in times when she
expects her daddy to be there, and write pages and pages of tales. This I solemnly swear.

Old Things New.....
Found an old treasure box? Step 1: Dust it, Step 2: Clean it, Step 3: Put it to use.....
I'm really starting to enjoy finding pieces like this and putting it to use.
I hate when toilet paper can be seen in the bathroom, so now it's a little discreet......
I found this treasure box in our basement. Eric has never seen it and he's been here for 8 years. So it has some antique touch. I had a piece of wood from a previous DIY project and used it as a sign. I found the graphic on The Graphics Fairy and added the text using French font and printed image then Mod Podge'd it. Vintage inspired once again.

Thinking Green with a little Theme ... Recycling Craft
Recycling has never been so fun....I'm learning to recycle and put old things to use. Our home is under contract and I'm going through some things packing and getting rid of the old (unless I can reuse). At any rate, I found an old book, romantic novel of sorts and while sipping on my protein shake and reminiscing on the DIY projects posted on Pinterest that day......Recycling that old protein bucket that I took the last scoop from today was on my To-Do list for sure.
So I cleaned the bucket out and got to work. I took pages from the old romantic novel I found and Mod Podge'd my way around the bucket. I also cut out words from the novel or words from a newspaper like "girl power", "beautiful" or anything that caught my eye.
The print on the lid of the bucket was found on the best sight ever!!!! The Graphics Fairy the print is found here: http://thegraphicsfairy.com/gorgeous-vintage-paris-label/
The dry flower on the lid was one my daughter Brooke picked out for me earlier this summer.
Away I went Mod Podge'ing and this was the end result .............Now, I just hope my daughters don't look to close at the pages of the novel, I realized later how steamy this romantic novel was. lol
I'm not done just yet thou, I want to glue a string of pearls around the top of the lid. I'll update when I do.

Next I Mod Podge'd the lid to an old box, once a centerpiece at a baby shower I went to, and used an old antique frame to give it a little Umph!

365 Days! Happy 1st Year Anniversary
Happy 1st year anniversary to us!
Blessed I am to have such a wonderful man in my life, one whose own needs he himself puts on the back-burner to ensure that his wife and children are taken care of first. One of many attributes that will never go unnoticed.
One who made marriage vows mean what they say, standing steady by his wife and children through trials and tribulations. Getting through them together is the best gift.
One who seriously upholds his promise that he made during our Cord of Three Strands ceremony symbolizing the joining of one man, one woman and God into marriage; agreeing that it was God who taught us to love and by keeping Him at the center of our marriage, His love will continue to bind us together as one throughout our marriage. "Though one may be overpowered, two can defend themselves. A cord of three strands is not quickly broken." Ecclesiastes 4:12
My words fall short, how else can I express myself?… He loves me just the way God created me, with every scar and imperfection. He sees past my outward flaws into the depths of my heart and loves me just the same. Just one look from him and I know everything is going to be ok.
We are so alike, and so different, in all the right ways, but he is considerably more selfless than I deserve. He is my life, and I am so blessed that God chose Eric Perez to be my husband.
I am blessed beyond measure to be his wife and thank him daily for enhancing my life.

Do-Over!!!! Converting an old dresser to a new buffet station
A few weeks ago my in-laws moved back to FL - they left two dressers in their old room - I knew not to get rid of them, considering we would eventually use them and especially considering we have minimal storage space in our home. Not to mention how I love to Pinterest my ass off, I knew I would be DIY'ing in no time at all.
So....I was getting a little tired of our bakers rack in the kitchen...my husband had it prior to me moving in, so we kept it; and considering I replaced almost all his furniture with mine I figured I'd let him keep the piece.....for now!!
The water bottles stacked on the bottom rack were exposed; and there is nothing that irks me more than to see a mess, even if it was organized chaos....then it a light bulb went on in my head the old dresser!!!
Off to Michael's I went with a 40% off coupon (my husband stood on one line with one coupon and one item and I stood in another (hey 40% off any one item is def worth doubling the line).... I Purchased 2 long posters of wine bottles and one bottle of Mod Podge. My husband had an old poster he never unwrapped so I used that as well....here we go:

Pumpkin Seed Snack Mix - Oh Yum! Perfect snack for hiking or wherever you go!
I have to say this is delish!! I should have done this last week when I hiked "Breakneck Ridge Loop" could've definitely used a little pick-me-up.

Ingredients
1 1/2 cups pumpkin seeds, roasted and salted
1/2 cup unsweetened coconut flakes
1/2 cup dried dates, chopped
1/2 cup unsalted almonds
1/2 cup candy coated chocolate pieces
1/2 cup unsweetened coconut flakes

In a large bowl, combine all ingredients until well incorporated. Store in an airtight container at room temperature.

Ooop's I did it again....fabulous Broccoli Cheese Breakfast Casserole
Pinterested my ass off once again and found this Broccoli Cheese Breakfast Casserole ... of course I'm gonna try it, love broccoli, love cheese, love breakfast...so why not.....
Here's what you'll need:
12 eggs, beaten with a fork
1 T milk or half and half
1 tsp. Spike Seasoning
fresh ground black pepper to taste
3 cups broccoli flowerets
3/4 cup cheese - Your favorite - I used Cheddar
Broccoli Cheese Breakfast Casserole |

3/4 cup cheese - Your favorite - I used Cheddar
Preheat oven oven to 375 degrees.
Spray a glass casserole dish with nonstick spray. (I use 7.25 X 11.25 inch pan for this size, but it
can be a little larger if you don't have that size.) Cut broccoli
into flowerets about 1 inch across. Put broccoli into pot with enough water to
cover and bring to a boil. As soon as the water boils and broccoli turns bright
green (less than 5 minutes) immediately drain broccoli into
colander.
While broccoli cools, break eggs into mixing bowl. Add milk or half and half, Spike seasoning, and black pepper and beat eggs until ingredients are well combined.
Put drained broccoli into casserole dish. Sprinkle cheeses over broccoli. Pour eggs over broccoli-cheese, then use a fork to gently stir so that broccoli and cheeses are evenly distributed throughout the eggs.
Bake at 375 degrees for about 25 minutes, or until top is slightly browned and eggs puff up slightly.
While broccoli cools, break eggs into mixing bowl. Add milk or half and half, Spike seasoning, and black pepper and beat eggs until ingredients are well combined.

GRIT - dEFINE yOURSELF
HOLY GRIT! HOLY SHIT! Took an intense .... I mean intense Grit Class yesterday at my gym, totally feel like kicking ass this morning :)
I've been so into clean eating, nutrition, etc. and since then my stamina, strength overall body weight and fat has dropped. Feeling great to say the least, so of course I have to challenge myself a bit more........
Check this little video out....I took a class like this at my gym yesterday and my body never cried so much, my sweat was pouring out of me. The best part......I did it! I completed the entire class without hesitation, sure I wanted to die at times and my face almost hit the mat a few times while trying to plank, but OMG! This morning, I woke up and my legs never felt tighter, my ass is killing me, my arms are jello, my upper, middle, lower back are tight as hell. Oh yes! It hurts so good!!!
I'm thinking of getting a little boot camp group going, we'll meet at Garret Mountain, get some music going and kick some ass while enjoying fresh air and views. I'll keep you posted...this is def. on my agenda!!!

Salad in a Jar: Fiesta Taco Salad (one of my best creations yet)
Want a party in your mouth?.....check this recipe I put together the other night. Had it for lunch today and honestly, I don't want to floss just yet, that's how good it was. Ok that was a little gross, but whatEv ;)
Layer in a medium mason jar in this order:
-Italian Dressing
-1/3 cup Black Beans
-1/3 cup Sweet Corn
-4-5 Tri-Color Cherry Tomatoes (halved)
-1/3 cup Ground Turkey (cooked in your fav Taco Seasoning and cooled)
-Handful Spinach

Salad in a Jar: Cobb Salad
One of my fav lunches...Salad in a Jar. Here is what I mixed up this time .....
My husband and I ordered some pollo a la brasa from El Chevere...(so good!!!). At any rate, of course we had some leftovers, so I placed it in the processor, knowing I'd find some use for it in a day or two. Sure enough.
Layer in a mason jar in this order:
-Buttermilk Ranch Dressing (yogurt)
-Tri-Colored Cherry Tomatoes
-Grilled Chicken ( I used leftover pollo a la brasa from El Chevere)
-1 Boiled Egg
-Hand full Baby Spinach
-Hand full Mixed Greens
-Fresh (thick grated) Parmesan Cheese
-(1 Strip) of Thick Sliced Bacon fried and crumbled
Stays fresh in Mason Jar for up to 4-5 days (if you use a vacuum sealer, even longer). Turn upside down and shake it out of jar and into a salad bowl...... mmmm mmmm mmmm

Overnight Oats - Chocolate Chip Cookie & Other Flavors Too.....
My health journey begins......Thank you Pinterest once again!
Last night I prepared some overnight oats in a mason jar of course, cause I love those things so much. I've tried a few recipes, this by far is my favorite - might be the chocolate in it :)
It's so simple too - combine the base ingredients, shake, add cinnamon & chocolate chips, close lid - place in fridge overnight and grab it on your way out. Stays good for up to 4 days - I've had at the 5th day too and still good - depends if you vacuum seal the jars, which I haven't had the opportunity to buy, given the fact that we have little counter space in our kitchen - Next house island in kitchen a must!
Anyway......here's what it looks like and the recipe follows - Enjoy!
Base:
1/3 cup rolled oats
1 heaping tsp chia seeds
1/3 cup plain Greek yogurt
1/3 cup nondairy milk - I use 2%
1/2 tsp vanilla
pinch of salt
In a 6-8 ounce mason jar add the base ingredients, cover and shake until well combined open....
.......then add the remaining ingredients from the flavor options below.
1. Chocolate Chip Cookie
2 tbsp chocolate chips
1/4 tsp cinnamon
2. Peaches n’ Cream
1/2 peach, chopped
3. Oatmeal Raisin Cookie
2 tbsp raisins
1 tbsp pecans, chopped
1/4 tsp cinnamon
1/8 tsp nutmeg
4. Carrot Cake
1/4 cup carrots, shredded
1 tbsp raisins
1 tbsp walnuts, chopped
1/2 tsp cinnamon
2 tsp maple syrup
5. Banana Bread 1 small banana, mashed
1 heaping tbsp pecans, chopped
1/4 tsp cinnamon
~ Cover and place in refrigerator overnight. In the morning, grab and go...when ready to eat ....
Stir well & Enjoy cold or room temp. ( I let mine sit for about 15 min. before eating)

I started "Spring Cleaning" and was about to donate lots of clothes, until I realized I can add "new" things to my wardrobe....Hello! What women wouldn't want to?

I'm in love with Pinterest: Onesies Cupcakes
I'm totally addicted to Pinterest. Always finding new ideas, even if I don't do the same exact thing. The pin's on DIY crafts and recipes, etc. are always exciting and gives you an idea to work off of.
My niece turns 1 today "Happy Birthday Adriana Jade". This coming Saturday is her Birthday Party and I'm always so excited to get crafty ideas into play when it comes to gifts, etc.
So she's a little princess, so of course I'm gonna buy her clothes, etc. The gifts will be in a few hat boxes, the last little box on top will have a cupcake made from a rolled up onesies with a sock in the middle. The idea was fitting, given that her theme is a "Sweet Shop".
Look how cute and simple it is to make.....

- Cupcake liners I used a round box I found at Michael's (I painted it in pink) or you can use a cupcake gift box, you can find this at Michaels or AC Moore and make 4 "cupcakes". I used tissue paper, because my cupcake liners were too small
- Cupcake sleeves (optional)
- Onesies
- Baby socks
- Scotch Tape I used rubber bands - couldn't find tape
So cute and simple...roll it up and use tape or a rubber band to secure |
I tried using a cupcake liner, but it was too small for this size onesies. but, this is fit for a Princess nonetheless |

Salad in a Jar: Cilantro Heaven ( I made that up, cute right! )
Oh my Wow!! This salad is awesome...little zing to it! By far the best recipe for dressing I've found on Pinterest, love the creamy flavor of the Greek yogurt combined with cilantro..to die for!! Top this salad with New York Brand Chili Lime Flavored Tortilla Strips and you get your zing to the zangy flavor of the dressing.
Ok let's go............
I've been using mason jars for my salads for a while now. I love that I can prep ahead and refrigerate and salad stays crispy for up to 4-5 days. If this is the way you plan on prepping this salad the ingredients go in order from bottom to top. When ready to eat just open jar, turn upside down and shake into salad bowl (I keep one at work). Or just make the salad as a side for dinner by mixing all ingredients below:

Cilantro Lime Dressing
- 1/3 cup extra virgin olive oil
- 1/2 cup chobani 0% plain yogurt
- 1 tbsp lime juice
- 2 garlic cloves, minced
- 1 tbsp white vinegar
- 1 bunch fresh cilantro, roughly chopped
- 1 tsp sea salt
- Place all ingredients in a food processor or blender and puree until smooth.
- Continue to add olive oil 1 tbsp at a time as necessary to create a smooth finish.

Balsamic Glazed Steak Rolls

According to my husband this was absolutely delicious!!! Unfortunately, my sinuses are getting the best of me and I could not taste a thing, except the texture was perfect!!
Want the recipe? Here it goes..........
For the Veggie filling -
* 1 carrot
* 1 bell pepper
* 1/2 a zucchini (depending on size)
* 5-6 green onions
* 2 cloves of garlic
* 1 tsp italian herb seasoning
For the Balsamic glaze sauce-
* 2 tsp butter
* 2 tbsp finely chopped shallots
* 1/4 cup balsamic vinegar
* 2 tbsp brown sugar
* 1/4 cup beef broth
FIRST: Cut the steak into 3" wide strips and season with salt, pepper and Worcestershire Sauce, place in zip lock and let marinade in fridge while getting the other ingredients together....Let's get started.......

* 1 1/2 – 2 lb skirt steak/ 8-10 thin sliced sirloin
* Salt & Pepper (according to taste)
* 3 tbsp Worcestershire sauce
* Any steak seasoning you like
* 1 tbsp olive oil

In the same pan (no need to wash it) add a touch of olive oil and toss in the garlic cloves to allow them to flavor the oil for a few minutes.
- Turn the heat up to high and toss in the carrots, bell pepper and zucchini (there’s no need to cook the green onion) and stir fry the veggies for no longer than 2-3 minutes.
- Season them with the the itlalian herb seasoning and salt and transfer the veggies to a bowl

To assemble the steak rolls, simply take a strip of the marinated steak and lay it with the short side towards you. Place the veggies (dont forget the green onion!) in the middle and roll the beef up over the filling, securing it with toothpick. Repeat the same with the other rolls. |

Heat a large skillet over medium-high heat. Add a touch of oil swirling to coat bottom. When hot, add beef rolls, seam side down, not touching and pan fry for a couple minutes. Then turn roll and cook it on all sides in the same way. Cook until you’re desired done-ness I cooked mine for a total of 9 min. turning when brown seared on one side. I cooked mine medium-rare and seasoned it with some Adobo for a touch of Latin flavor :) |

Serve with the balsamic glaze sauce spooned over the top of each roll |
